Plum Good Teriyaki Chicken

Ingredients
- 1⁄2 cup plum jam
- 1⁄4 tablespoon fresh ginger, grated
- 1⁄4 cup soy sauce
- 1 tablespoon crushed garlic
- 1⁄4 cup dry vermouth
- 4 boneless chicken breasts
- 1⁄2 cup whipping cream
- 2 tablespoons sesame oil
- 1 cup sliced sauteed mushroom
Directions
- Brown chicken in the sesame oil.
- Remove chicken from the pan and add the jam, soy sauce, ginger, garlic and vermouth.
- Stir until smooth and hot including any bits from the chicken.
- Put the chicken back in the pan and simmer till chicken is cooked about 15 minutes.
- Stir in whipping cream and sauteed mushrooms.
- Serve over rice.
