Plum Duff

A real Christmas pudding that requires a pudding cloth. Made slighter easier by using self-raising flour.

• Yields: 1 pudding

Ingredients

• 2  cups self-raising flour
• 1  teaspoon salt
• 1⁄2 cup brown sugar
• 1⁄2 cup white sugar
• 2  tablespoons golden syrup
• 2  teaspoons mixed spice
• 1 1⁄2 cups  mixed fruit
• 1⁄2 teaspoon baking soda
• 1  cup  chopped vegetable suet (eg Kremelta)
•  milk, to mix

Directions

1. Take a strong cloth and dip in boiling water, then dust cloth thickly with self raising flour and put mixture in cloth and tie securely.
2. Boil for 3 hours.
