Pizza Soup

Ingredients
- 1 tablespoon olive oil
- 1 cup red onion (diced)
- 6 ounces Canadian bacon (diced)
- 2 cups pasta sauce
- 1 (14 1/2ounce) can diced tomatoes with garlic, oregano and basil (do not drain)
- 1 1⁄2 cups bell peppers (frozen or fresh, diced)
- 14 1⁄2 ounces beef broth
- 1 (6 ounce) jar sliced mushrooms (drained)
- 1⁄4 teaspoon dried basil
- 1⁄4 teaspoon dried oregano
- 1 dash cayenne pepper (optional)
- 3 tablespoons parmesan cheese (grated)
- 1 1⁄2 cups mozzarella cheese (grated)
Directions
- Heat oil over medium heat in a 3 quart saucepan.
- Add onion and saute' until translucent.
- Add meat and stir-fry about 3 minutes.
- Turn up heat to medium-high.
- Add pasta sauce, canned tomatoes and broth.
- Stir well.
- Add peppers, mushrooms, oregano and basil.
- Stir well.
- Bring to an early boil and reduce heat to simmer.
- Simmer for 10 minutes.
- Turn off heat, stir in parmesan cheese.
- Ladle into bowls and top with mozzarella cheese.
