Pizza Pie Muffins

Yields: 12 Muffins

Ingredients

  • 2  cups all-purpose flour
  • 14 cup  chopped  pepperoni
  • 2  tablespoons  grated parmesan cheese
  • 1  tablespoon baking powder
  • 12 teaspoon  dried Italian herb seasoning
  • 12 teaspoon salt
  • 12 cup milk
  • 12 cup  pizza sauce or 12 cup  spaghetti sauce
  • 3  tablespoons olive oil or 3  tablespoons  cooking oil
  • 1  egg

Directions

  1. Heat oven to 400 degrees.
  2. Line 12-cup muffin pan with paper baking cups.
  3. In large bowl, stir together flour, pepperoni, cheese, baking powder, Italian herb seasoning and salt.
  4. In small bowl beat together milk, pizza or spaghetti sauce, oil and egg.
  5. Pour wet ingredients over flour mixture and stir just until moistened.
  6. Divide mixture evenly among baking cups.
  7. Bake 20 minutes or until top s are golden brown.
  8. Cool pan on wire rack 10 minutes.
  9. Remove paper cups from pan and cool completely.
  10. TO FREEZE: Wrap cooled muffins in plastic wrap and then foil.
  11. Can freeze 2-3 months.
  12. A frozen muffin placed in a lunch box at room temperature will thaw in 3 hours.
