Pizza Calzone

Yields: 8 Slices
Ingredients
- 1 pizza dough, cut in 2 (use a high quality pizza dough)
- 1⁄2 cup sliced zucchini
- 10 kalamata olives, pitted and diced
- 1⁄4 cup chopped turkey pastrami
- 2 cups shredded mozzarella cheese (sometimes I toss in some Fontina)
- 5 tablespoons of your favorite tomato sauce
- 2 -4 dashes italian seasoning
- 1 tablespoon crushed garlic
- 2 whole tomatoes, salted and water drained off (this is the second recipe)
- 1⁄2 cup chicken breast, chopped into pieces (this is great if you have leftovers)
- 10 black olives, pitted and chopped up
- 2 cups shredded mozzarella cheese
- 1⁄4 purple onion, sliced
- 8 large mushrooms, sliced
- 2 -4 dashes italian seasoning
- 1 tablespoon crushed garlic
- 2 tablespoons butter (this is for top crust)
- 1 tablespoon italian seasoning
- 1 dash red pepper flakes
- 1 tablespoon parmesan cheese
Directions
- Cut your pizza dough in half.
- Stretch one half on your pizza stone (I use the one from Pampered Chef--it's the best).
- Place sauce, cheese and toppings add more cheese on top of toppings.
- Stretch 2nd half of dough over pie.
- Crimp edges to form closer.
- If i use mushrooms or onions I sauté first with garlic in olive oil or butter.
- Melt 2 TBS butter (you can also use olive oil) brush on top crust with some Italian seasoning, crushed red pepper and or some Parmesan cheese.
- Bake 500 degrees 15 to 20 minutes depending on oven and desired crispiness.
- Let stand 10 minutes from oven.
- Cut and serve.
