Pinto Tortilla Soup - Vince Seeley

Ingredients

  • 1  tablespoon butter
  • 12  chopped onion (cup)
  • 1  teaspoon  minced garlic
  • 3  water (cup)
  • 1  salsa, I used black bean and corn thick (container) or 1  chunky salsa (container)
  • 2 (14 ounce)  pinto beans with  liquid, I used a quart of pinto beans I had canned
  • 12  chopped  red pepper (cup)
  • 1  bay leaf
  • 2  tablespoons  , instant veggie stock mix
  • 14 teaspoon pepper

Directions

  1. Garnish.
  2. Tortilla strips fried in oil till crispy.
  3. Grated cheese.
  4. Melt butter in pot, saute' onion and garlic until soft. Add next 7 ingredients. Bring to a boil then reduce heat and simmer 1 hours.
  5. Remove bay leaf before serving.
  6. Garnish with strips and cheese.
