Pinto Tortilla Soup - Vince Seeley

Ingredients
- 1 tablespoon butter
- 1⁄2 chopped onion (cup)
- 1 teaspoon minced garlic
- 3 water (cup)
- 1 salsa, I used black bean and corn thick (container) or 1 chunky salsa (container)
- 2 (14 ounce) pinto beans with liquid, I used a quart of pinto beans I had canned
- 1⁄2 chopped red pepper (cup)
- 1 bay leaf
- 2 tablespoons , instant veggie stock mix
- 1⁄4 teaspoon pepper
Directions
- Garnish.
- Tortilla strips fried in oil till crispy.
- Grated cheese.
- Melt butter in pot, saute' onion and garlic until soft. Add next 7 ingredients. Bring to a boil then reduce heat and simmer 1 hours.
- Remove bay leaf before serving.
- Garnish with strips and cheese.
