Pinto Bean Pie

Ingredients
- 1 1⁄2 cups sugar
- 1 teaspoon ground allspice
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1 1⁄2 cups cooked mashed pinto beans
- 1 egg, beaten
- 2 egg yolks, beaten
- 1 teaspoon vanilla extract
- 1 unbaked 9-inch pie crust
Directions
- Combine sugar and spices in a medium mixing bowl; mix well.
- Add beans, egg, egg yolks and vanilla; mix until smooth.
- Pour into pie crust.
- Bake at 350 degrees for 15 minutes.
- Reduce heat to 300 degrees and bake 45 minutes or until set.
- Let cool before serving.
