Pink Party Sandwich Cookies

Directions

  1. Cream butter and sugar until smooth.
  2. Blend in eggs and vanilla.
  3. Stir together flour, cornstarch and cream of tartar.
  4. Gradually add flour mixture to creamed mixture, blending well.
  5. Chill dough until firm.
  6. Roll out on a lightly floured surface to 1/8" thickness.
  7. Cut out with 3" round cookie cutter and place on greased baking sheet.
  8. Bake at 400* for about 8 minutes or until edges are golden.
  9. Remove to a wire rack to cool.
  10. Fill with Pink Butter Frosting.
  11. Pink Butter Frosting: Cream butter until light and fluffy.
  12. Gradually beat in sugar, cream and vanilla.
  13. Tint with red food coloring (or any color of your choice).
  14. Beat until filling is of spreading consistency.
