Pineapple Tofu

Ingredients
- 1 lb firm tofu, pressed and cutted in pretty triangles
- 1 cup vegan sweet and sour sauce
- 1 cup pineapple juice (from the can)
- 1 cup pineapple chunk
- 1⁄4 cup tamari soy sauce
- 2 teaspoons rice vinegar
Directions
- Mix all the ingredients in a ziploc bag. Let sit one hour.
- Pre-heat the oven to 375°F
- Put the mix in a casserole. Cover with foil. Bake for an hour.
- Serve with white rice and veggies on the side.
