Pineapple Salsa

A unusual fruit salsa for fish, pork, and just about anything else you can think of.

• Yields: 2 cups

Ingredients

• 2  cups pineapple, minced
• 2 -3  medium garlic cloves, minced
• 2 -3  tablespoons of fresh mint
• 2  tablespoons lime juice
• 1⁄4 teaspoon salt
• 1⁄4 teaspoon cumin
•  cayenne pepper, to taste

Directions

1. Combine everything in a tightly covered container and refrigerate.
2. This will keep a long time.
