Pineapple Parfait Dessert

This is from my Mom's recipe cards. I have not tried it yet. Cooking is chill time.

Serves: 5-8

Yields: 2 pies

  1. Dissolve Jell-O in 1/2 cup hot water.
  2. Add eggs, pineapple, juice, sugar.
  3. Bring to a boil, set aside to cool.
  4. Beat chilled milk in bowl until it peaks, immediately stir in cooled Jell-O mixture and extract.
  5. Pour into crust and chill.
