Pineapple Muffins

Ingredients
- 1⁄2 cup granulated sugar
- 3⁄4 cup margarine
- 2 eggs
- 1 teaspoon vanilla
- 1⁄2 cup crushed pineapple, with juice
- 1⁄2 cup carrot, grated
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 2 teaspoons cinnamon
- 1 teaspoon salt
Directions
- Cream sugar and margarine until fluffy.
- Add eggs one at a time, beating in completely.
- Add vanilla, pineapple and carrot, mixing until smooth.
- Add the rest of the dry ingredients and continue to mix.
- Spoon into greased muffin tins and bake at 350F for 20 minute or until toothpick comes out clean.
