Pineapple Dream Squares

Yields: 1 9-inch square pan
Ingredients
BASE
- cooking spray
- 1 1⁄2 cups all-purpose flour
- 1⁄4 cup brown sugar, lightly packed
- 1⁄2 cup butter or 1⁄2 cup margarine, softened
TOPPING
- 3 eggs
- 1 cup flaked coconut
- 3⁄4 cup brown sugar, lightly packed
- 3⁄4 cup corn syrup
- 1 (14 ounce) can crushed pineapple, well drained
- 2 tablespoons butter or 2 tablespoons margarine, melted
- 1 teaspoon vanilla extract
Directions
- TO MAKE BASE: Preheat oven to 350°F Spray a 9-inch square pan with cooking spray.
- In a medium bowl, combine flour and brown sugar. Cut in butter until mixture is crumbly. Press into bottom of pan. Bake until lightly browned, 12-15 minutes. Cool slightly.
- TO MAKE TOPPING: In a medium bowl, wisk eggs just until blended. Stir in remaining ingredients. Spread over base. Bake until topping is set but still soft in center, 40-45 minutes.
- Cool completely on a wire rack. Cut into squares.
- Keep refrigerated.
