Pineapple Cinnamon Cookies

Ingredients
- 1 egg
- butter, 3/4 stick, softened
- 6 tablespoons brown sugar
- 1⁄2 teaspoon vanilla extract
- 3⁄4 cup flour
- 1⁄2 teaspoon baking powder
- 1⁄4 teaspoon salt
- 1 1⁄2 cups quick-cooking oats
- 3 tablespoons pineapple juice
- 1⁄2 teaspoon cinnamon
- 1⁄2 cup pineapple tidbits, well drained
Directions
- Cream butter and sugar together. Beat in egg and vanilla.
- Sift together the flour, baking powder and salt. Stir flour mixture into the batter.
- Add remaining ingredients. Combine well.
- Drop by rounded teaspoonfuls onto parchment lined cookie sheets. Flatten slightly.
- Bake for 12-15 minutes at 350 degrees.
