Pineapple Cake W/ Rich Butter Sauce

Ingredients
For Cake
- 20 ounces crushed pineapple in juice
- 1⁄2 teaspoon vanilla
- 1 1⁄2 cups sugar
- 1 egg
- 2 cups flour
- 2 teaspoons baking soda
- 1⁄8 teaspoon salt
- 1⁄2 cup coconut (optional)
- 1⁄2 cup chopped pecans (optional)
For Butter Sauce
- 1 cup butter
- 2⁄3 cup sugar
- 2⁄3 cup unsweetened condensed milk
- 1 egg yolk
- 1⁄2 teaspoon vanilla
Directions
- For the Cake:
- Preheat oven to 350°F.
- Grease a 9x13-inch glass pan.
- Mix all cake ingredients until thoroughly combined. Don't over mix.
- Spread into prepared pan.
- Bake for 40 minutes.
- For Butter Sauce:
- In a medium sauce pan whisk the egg yolk and sugar until smooth.
- Add condensed milk and whisk to combine.
- Add butter.
- Cook and stir for 6 minutes over medium heat.
- Pour sauce immediately over warm (not hot) cake.
