Pineapple-Applesauce-Pumpkin Muffins

Ingredients
- 1 1⁄2 cups flour
- 3⁄4 cup sugar
- 3⁄4 teaspoon baking powder
- 3⁄4 teaspoon baking soda
- 1⁄4 teaspoon clove
- 1⁄2 teaspoon cinnamon
- 1⁄4 teaspoon nutmeg
- 1⁄2 teaspoon salt
- 1⁄4 cup canola oil
- 1⁄4 cup applesauce
- 1⁄4 cup crushed pineapple
- 2 eggs
- 3⁄4 cup canned pumpkin
Directions
- Preheat oven to 400 degrees. Spray a mini muffin pan with nonstick cooking spray. Set aside.
- In a large bowl, combine first 8 ingredients.
- In a separate bowl, combine oil, applesauce, pineapple, eggs, and pumpkin.
- Add to dry ingredients and stir just to combine.
- Spoon a rounded tablespoon into each muffin cup.
- Bake for 12 - 14 minutes.
