Pimiento Cheese and Fried Green Tomato Sandwich

Ingredients
- pimento cheese
- 3⁄4 cup mozzarella cheese, shredded
- 3⁄4 cup sharp cheddar cheese, shredded
- 1⁄4 cup mayonnaise
- 2 ounces cream cheese, room temperature
- 2 tablespoons roasted red peppers, chopped
- 1⁄2 teaspoon hot pepper sauce
- 1⁄4 teaspoon garlic powder
- salt
- fried green tomato
- 2 large green tomatoes, sliced 1/2 in thick
- salt and pepper
- 2 eggs
- 1 teaspoon hot pepper sauce
- 1 cup all-purpose flour
- 1 1⁄2 teaspoons garlic powder
- 1 teaspoon paprika
- 2 cups panko breadcrumbs or 2 cups breadcrumbs
- vegetable oil, for frying
- 4 ciabatta rolls, split
- 8 slices bacon, cooked crisp
Directions
- Mix the Pimiento Cheese ingredients together well and set aside.
- Pat tomato slices dry. Beat eggs and hot pepper sauce in bowl. Mix flour with garlic powder and paprika in a shallow bowl. Put panko or breadcrumbs in another shallow bowl. Heat oil in a frying pan.
- Dip each tomato slice first in flour, then in egg, then in breadcrumbs and fry. Set aside on a paper-towel lined plate.
- Spread pimiento cheese on cut sides of rolls. Place cheese-side-up on a baking sheet and broil until cheese is hot and bubbly. Place tomato slices and two slices bacon between halves of each roll.
