Pimento Cheese (Frances Virginia Tea Room)

Yields: 3 cups
Ingredients
- 1 cup undiluted evaporated milk
- 1 lb sharp cheddar cheese
- 1⁄2 teaspoon salt
- 1⁄2 cup chopped pimiento
Directions
- Heat milk, cheese and salt in double boiler until cheese melts. Add pimentos. Cool. Use amount desired to make sandwich. Store in refrigerator. If you like a little heat add some diced jalapeno.
