Pig Pickin Cake

This is a good cake with a light and creamy frosting.

• Yields: 1 three layer round cake

Ingredients

• 1  yellow cake mix
• 1⁄2 cup butter
• 4  eggs
• 1 (11 ounce) can mandarin oranges

• ICING

• 3  ounces instant vanilla pudding
• 22  ounces crushed pineapple
• 1⁄2 cup powdered sugar
• 9  ounces Cool Whip
• 1  cup coconut

Directions

2. Beat all ingredients well.
3. Bake in 3 round pans at 325 for 25 minutes.
4. Bake in 9*13 pan for 35 minutes.

6. Mix puddin and pineapple.
7. Let set a few minutes.
8. Add sugar, cool whip, and coconut.
9. Spread between layers and on sides and top.
10. Keep in icebox.
