Pickles Bruschetta

Yields: 2 1/2 cups filling
Ingredients
- 1⁄2 cup bick's baby dill pickle, Ultimate Garlic, chopped
- 1 tablespoon bick's baby dill pickle, Ultimate Garlic, pickle brine
- 2 cups tomatoes, seeded and finely chopped
- 1 tablespoon crisco canola oil
- 1 baguette, sliced into 1/2-inch rounds (about 18-inches)
- fresh basil (to garnish) (optional)
Directions
- Combine first 6 ingredients in medium glass bowl. Stir to combine.
- Brush one side of bread with oil and toast in preheated oven, oiled side up, until lightly browned, 5-10 minutes. Remove from oven and top each baguette slice with about 1 tablespoons of tomato mixture.
- Garnish with fresh basil leaves if desired. Serve immediately.
