Pickled Onions

Yields: 2 cups
Ingredients
- 2 red onions, cut into 1/8 inch slices
- 1 cup red wine vinegar
- 1 cup water
Directions
- In a big bowl or big jar with a lid, submerge the onions in the vinegar and the water.
- Let sit for at least 12 hours or, covered, up to 2 weeks.
- Squeeze the excess liquid from the onions before using.
