pickled jalapeno peppers

my girlfriend gave me this to can them for her last year.

Yields: 6 pints

Ingredients

  • 2  quarts  jalapeno peppers
  • 2  cups vinegar
  • 2  cups water
  • 1  teaspoon salt
  • 1  pinch  italian seasoning
  • 1  dash olive oil
  • 4 -5  cloves garlic

Directions

  1. clean and trim the stem of peppers,pierce the sides of the peppers, place in jars.
  2. Add 1 tea salt, pinch of italian seasoning, and three or four cloves of garlic, a dab of oil.
  3. mix equal parts of water and white vinegar.
  4. boil for 10 minutes and then process in water bath.
