Pickled Green Tomatoes

Yields: 1 1/2 pints

Ingredients

  • 34 cup vinegar
  • 23 cup water
  • 2  tablespoons sugar
  • 14 teaspoon salt
  • 1  tablespoon  dill seed
  • 3 -6  small  serrano peppers

Directions

  1. Mix vinegar, water, sugar and (1/4 tsp.) salt in a small pan.
  2. Bring to boiling, reduce and simmer uncovered for 5 minutes.
  3. Cut tomatoes into wedges.
  4. Cook tomatoes and (1 tsp) salt covered in boiling water for 1 minute.
  5. Drain tomatoes, rinse with cold water.
  6. Transfer to 3 hot, clean dry 1/2 pint jars.
  7. Place 1 teaspoons of the dill seed and 1-2 serrano peppers into each jar.
  8. Pour pickling mixture over tomatoes. Be sure to leave 1/4" head space.
  9. Seal and refrigerate overnight.
