Pickled Baby Corn

Yields: 2 Quarts

Ingredients

  • 2  quarts  baby corn, immature field corn ears picked when only 2 or 3 inches long
  • 1  cup water
  • 2  cups sugar
  • 2  cups vinegar
  • 2  teaspoons salt
  • 1  tablespoon  pickling spices, in a bag

Directions

  1. Husk and boil corn for 4 minutes-- no longer than that.
  2. Pack into hot jars and cover with syrup made by boiling other ingredients 5 minutes.
  3. Seal in jars according to manufactuers instructions.
