Pesto Rice

This is a tasty, cheesy way to serve rice. It's best in the summer, served with fresh tomatoes and a crusty baguette. Show more

  1. Bring the rice to a boil. Reduce heat and simmer, covered, for 45 minutes.
  2. Blend the other ingredients in a food processor to make a pesto sauce.
  3. Add to the rice.
  4. Serve with lots of fresh tomatoes to make up for the "death by cheese and olive oil" sensation. If it needs made up for, that is. I kind of like it.
