Pesto Mashed Potatoes

I had this at a wedding buffet last weekend and fell in love!

• Serves: 8

Ingredients

• 4  cups  prepared mashed potatoes
• 2  tablespoons garlic (roasted and mashed)
• 1⁄2 cup  prepared pesto sauce
• 1⁄2 cup butter (sliced thinly)
• 2  tablespoons olive oil

Directions

1. Mix the mashed potatoes, garlic, and pesto.
2. Place in a buttered casserole dish and top with butter slices.
3. Bake on 350 just until the butter has melted.
4. Drizzle with olive oil and serve.
