Persian Rice

Ingredients
- 1 cup long grain rice, cooked
- 1⁄2 cup cashews
- 1⁄2 cup pine nuts
- 1 onion, finely chopped
- 1 tablespoon olive oil
- 1 tablespoon Asian seasoning (persian)
- 2 teaspoons barberries
- 1⁄2 cup green peas
- 1⁄4 cup carrot, finely diced
- 1 teaspoon dried spearmint
Directions
- Spread rice in a shallow tray to dry for at least an hour.
- In a dry pan, toast nuts until just browning.
- Heat oil in a pan and saute onion until just transparent, add remaining ingredients and stir well to prevent clumping.
