Perfectly Workable Pie Crust

Yields: 1 2-Crust Pie
Ingredients
- 2 1⁄4 cups flour
- 1 teaspoon salt
- 3⁄4 cup plus 2 tbs shortening
- 1⁄3 cup water
Directions
- Cut the shortening into 2 cups of flour and salt, until you have small pieces or beads.
- Make a paste from the remaining 1/4 cup of flour and 1/3 cup of water by mixing it with a fork in a separate larger cup.
- Work this paste into the dough, until thoroughly mixed. Sprinkle with flour and roll out on pastry board.
