Perfectly Juicy Roast Pork

This is a recipe I found for roast pork almost by accident - it's adapted from a recipe for pork pasties. I discovered that if you just cook the pork in the same way it makes a perfect pork roast!! This is amazingly soft, juicy and succulent. Best roast pork I have ever eaten, I reckon. Show more

  1. Preheat oven to 220 degrees celsius.
  2. Score pork skin and fat (do not cut into flesh).
  3. Season to taste with salt and pepper.
  4. Place in roasting pan and roast until skin begins to crisp up.
  5. Add cider and stock to pan and cover with foil.
  6. Reduce oven to 150 degrees celsius.
  7. Roast for approximately 5.5 to 6 hours.
