Yields: 6 cups

Ingredients

  • 1 12 cups quinoa (any variety)
  • 3  cups water or 3  cups broth
  • 2  tablespoons  extra-virgin olive oil
  • 1  teaspoon  fine grain salt

Directions

  1. 1. Place the quinoa in a fine mesh sieve and run under a stream of cool tap water. Swirl the quinoa with your hand so each piece is rinsed.
  2. 2. Place the water, olive oil, and salt, in a medium saucepan. Bring to a boil. Stir in the quinoa and return to a boil. When the water boils, cover the saucepan and reduce the heat to low. Cook for 15-20 minutes, or until most of the water is cooked off.
  3. 3. Remove the saucepan from the heat and let it stand, covered, for 10 minutes. The steam will further cook the quinoa and absorb the remaining water. Fluff the quinoa with a fork and season with salt and pepper to taste.
  4. 4. Cooked quinoa will keep for up to 5 days in the refrigerator or for 1 month in the freezer.
