Perfect Potato Salad

Ingredients
- 5 cups chopped potatoes
Marinade
- 1⁄2 cup oil or 1⁄2 cup water
- 3 tablespoons apple cider vinegar
- 1 -2 teaspoon dried parsley, crushed
- 1⁄4 teaspoon basil
- 1⁄4 teaspoon sea salt
- 3 dashes cayenne pepper
- 3 dashes sea kelp (optional)
Add after marinated
- 1⁄3-1⁄2 cup chopped fresh parsley
- 1⁄2 cup eggless mayonnaise (Veganaise is good)
- 1⁄2 teaspoon paprika
- 1⁄4-1⁄2 teaspoon horseradish, to taste finely chopped or 3 -6 green onions, finely chopped
- sea salt
- 3 dashes cayenne
Directions
- Chop and steam potatoes until very tender.
- Marinate potatoes in the marinade for 2-4 hours or overnight, stirring every half hour, or 3-4 times.
- Drain off excess liquid (if any).
- Mix potatoes with all other ingredients.
- Chill for 1 hour or more before serving.
