Perfect Pineapple Topping

Ingredients
- 1 fresh ripe pineapple
- 4 tablespoons caster sugar
- 1⁄2 cup of fresh mint
Directions
- Cut up your pinapple into chunks and put in fridge to chill.
- Put the mint and sugar into a mortar and pestle (I don't have one so I just used a mug and muddle stick- it worked a treat!) and grind it together (or as Jamie puts it- bash the hell out of it) untill the sugar changes colour to green and the you can smell the mint.
- Then all you need to do is sprinkle over the pinapple and serve immediately while the pineapple is cool!
