  1. In a mixing bowl cream butter and sugar.
  2. Beat in egg yolk and vanilla.
  3. Combine the flour, baking powder and salt; gradually add to the creamed mixture and mix well.
  4. Divide dough in half; add peppermint extract and red food coloring to one portion of dough.
  5. On a work surface roll out each portion of dough between wax paper into a 16x10 inch rectangle.
  6. Remove wax paper.
  7. Place red rectangle over plain rectangle; roll up tightly jelly roll style starting with the long side.
  8. Wrap in plastic wrap.
  9. Refrigerate overnight or until firm.
  10. Unwrap dough and cut into 1/4 inch slices.
  11. Place 2 inches apart on lightly greased baking sheets.
  12. Bake at 350°F for 12-14 minutes or until set.
  13. Cool for 2 minutes before removing from pan.
