Peppered Pork and Wine Stew

Ingredients
- 1 lb pork tenderloin, sliced
- 1 cup beef broth
- 1⁄2 cup dry white wine
- 1 medium onion, chopped
- 1⁄2 cup red bell pepper, chopped
- 1 garlic clove, minced
- 2 teaspoons finely crushed peppercorns
- 1 tablespoon red wine vinegar
- 1 tablespoon cornstarch
- 2 tablespoons cold water
- salt and pepper
- 1⁄4 cup minced chives or 1⁄4 cup parsley
Directions
- Combine all ingredients except vinegar, cornstarch, water, salt, pepper and chives in a slow cooker.
- Cook on high 3-4 hours.
- Combine vinegar, cornstarch and water. Stir into stew.
- Season to taste with salt and pepper. Serve sprinkled with chives.
