  1. In medium saucepan, heat oil. Sauté red pepper until beginning to soften, about 3 minutes. Add garlic and cook, stirring, 1 minute.
  2. Add rice and broth. Bring to a boil over high heat. Cover, remove from heat and let stand until liquid is absorbed and rice is tender, about 5 minutes.
  3. Stir in olives and season with pepper. Fluff with a fork before serving.
