Penzey's Chocolate Chip Kisses

Yields: 36 cookies

Ingredients

  • 2  egg whites
  • 18 teaspoon cream of tartar
  • 18 teaspoon salt
  • 1  teaspoon vanilla extract
  • 5  drops  red food coloring
  • 34 cup  superfine sugar
  • 12 cup  mini chocolate chip

Directions

  1. Preheat oven to 250.
  2. Beat egg whites, cream of tartar, and salt on high speed until peaks form (about 3 mins).
  3. Add vanilla extract and food coloring.
  4. Gradually add the sugar, beating until stiff.
  5. Gently fold in chocolate chips.
  6. Drop by scant teaspoons onto a greased cookie sheet about 2 inches apart.
  7. Bake at 250 for 25 minutes.
  8. The kisses will be chewy on the inside and slightly brown on the botom and will retain their pink color.
