Penne With Spinach and Feta

Serves: 4-6

Ingredients

  • 8  ounces penne, uncooked
  • 2 12 cups tomatoes, chopped
  • 4  cups  Baby Spinach, chopped, stems removed and rinsed
  • 3  garlic cloves, minced
  • 12 cup red onion, chopped
  • 14 cup  Greek olive, cut in half (optional)
  • 2  tablespoons olive oil
  • 8  ounces feta cheese

Directions

  1. Boil pasta according to package directions.
  2. Drain, and return to pot.
  3. Add tomato, spinach, garlic, onion, olives, and oil to pasta.
  4. Cook over medium heat until spinach is wilted, about 3-5 minutes, stirring occasionally.
  5. Add cheese, cooking for 1 more mintue.
  6. Stir and serve!
