Pecan Pie Mini Muffins

Yields: 28-30 mini muffins
Ingredients
- 1 cup brown sugar, packed
- 1⁄2 cup flour
- 1 cup pecans, chopped
- 2⁄3 cup butter, melted
- 2 eggs, beaten
Directions
- In a large bowl, combine brown sugar, flour, and pecans. Set aside.
- In another bowl, combine melted butter, and eggs. Mix well.
- Stir butter-eggs mixture into flour mixture.
- Fill well greased, and floured minaiture muffin cups 2/3 full.
- Bake at 350 degrees for 20-22 minutes or until toothpick inserted in centers of muffins comes out clean.
- Remove, and cool on wire racks.
