Pecan Pie Mini Muffins

I came across this a while back, and tried this for the holidays. A simple 30-35 minute recipe.

• Ready In: 30 mins
• Serves: 5-10
• Yields: 28-30 mini muffins

Ingredients

• 1  cup brown sugar, packed
• 1⁄2 cup flour
• 1  cup pecans, chopped
• 2⁄3 cup butter, melted
• 2  eggs, beaten

Directions

1. In a large bowl, combine brown sugar, flour, and pecans. Set aside.
2. In another bowl, combine melted butter, and eggs. Mix well.
3. Stir butter-eggs mixture into flour mixture.
4. Fill well greased, and floured minaiture muffin cups 2/3 full.
5. Bake at 350 degrees for 20-22 minutes or until toothpick inserted in centers of muffins comes out clean.
6. Remove, and cool on wire racks.
