Peas and Carrot Ribbons

Ingredients

  • 1  tablespoon butter
  • 6  carrots, sliced into long strips with a vegetable peeler (12 ounces total)
  •  coarse  salt and pepper
  • 1 (10 ounce) package  frozen peas, thawed

Directions

  1. Heat butter over medium heat in a medium saucepan.
  2. Add carrots; season with salt and pepper.
  3. Cook, stirring occasionally, until crisp tender (about 6-8 minutes).
  4. Add peas and cook until heated through, about 2-3 more minutes.
  5. Season with salt and pepper.
