Pear Sauce

Yields: 2 2/3 cups
Ingredients
- 2 medium pears, peeled, cored, and sliced
- 1 teaspoon grated fresh lemon rind
- 2 1⁄2 tablespoons lemon juice
- 1⁄3 cup sugar
- 1 tablespoon cornstarch
- 1⁄2-1 cup water
Directions
- Combine first 3 ingredients in a container of an electric blender; process until smooth.
- Combine pear mixture, sugar, cornstarch, and water in a medium saucepan.
- Bring to a boil; reduce heat, and cook, stirring constantly, 1 minute.
- Remove from heat; cool.
- Yield: 2 2/3 cups.
