Pear Salad

We had this at an office birthday party, and it is delicious. I couldn't tell I was eating jello. Now I know what to make with the jello I bought on sale. Of course, how could you go wrong with whipping cream and cream cheese? Thanks Roxanne for this terrific salad--it's more like a dessert to me. Serving size is estimated. Show more

Serves: 6-8

Ingredients

  • 32  ounces pears
  • 1  cup water
  • 3  ounces  lemon Jell-O gelatin
  • 8  ounces cream cheese
  • 12 pint  whipping cream

Directions

  1. Drain the pears and set aside a cup of the pear juice. Place the rest of the pears and juice in the blender with the pears.
  2. If you don't have enough for a full cup of juice from the pears, add enough water to make 1 cup.
  3. Boil the juice or juice/water mixture to set the jello.
  4. Add jello to the hot juice and stir to dissolve.
  5. Meanwhile, blend the pears until smooth and add cream cheese and blend again.
  6. Whip the cream and add to jello mixture.
  7. Fold in pear mixture with jello and top with any remaining pears.
  8. Cool until set (it may take several hours refrigerated).
  9. Make sure you don't double the batch because the consistency will not be right. Make 2 separate batches instead.
