Pear Salad

Ingredients
- 1⁄2 lemon, juice
- 2 pears, cored and sliced
- 2 teaspoons tarragon vinegar or 2 teaspoons white wine vinegar
- 1 teaspoon Pernod (optional)
- 1 teaspoon whole grain mustard
- 1 pinch salt
- 1 pinch sugar
- 2 tablespoons sesame oil
- 2 sticks celery, sliced
- 1 fennel bulb, thinly sliced
Directions
- Drizzle the lemon juiced over the sliced pears.
- Mix together the vinegar, Pernod if you are using it, mustard, salt and sugar until well blended, then gradually whisk in the sesame oil.
- Arrange the fruit and vegetables attractively in a bowl or on individual plates, and drizzle on the dressing.
