Pear Honey

Ingredients
- 5 cups pears, cored, peeled, chopped or grated
- 5 cups sugar
- 1 lime
- 1 tablespoon powdered ginger
Directions
- Make sure pears are peeled, cored, and chopped or grated.
- Grate rind of lime and extract juice.
- Mix pears, sugar, rind, juice and ginger together in pan. Bring to boil. Turn down heat and simmer 45 minutes. Stirring until food is clear and liquid has thickened.
- Poor into jars and seal.
