Peanutty Oatmeal Cookies

Ingredients
- 1⁄4 cup brown sugar (not packed)
- 1⁄4 cup all natural-style peanut butter
- 2 tablespoons Splenda granular
- 2 tablespoons light butter, room temperature
- 2 tablespoons no-sugar-added applesauce
- 1 egg (or 2 whites)
- 1⁄4 teaspoon vanilla extract
- 1⁄3 cup whole wheat flour
- 1⁄2 teaspoon baking powder
- 1 dash salt and cinnamon
- 3⁄4 cup old fashioned oats (not instant)
Directions
- Preheat oven to 350 degrees.
- In a large bowl, combine brown sugar, peanut butter, Splenda, butter spread, applesauce, egg, and vanilla extract. Mix thoroughly with a wire whisk.
- Add flour, baking powder, salt and cinnamon, and stir until completely mixed and smooth.
- Add oats and mix until they are thoroughly coated with the batter.
- Lightly spray a large baking sheet with PAM. Spoon batter onto the sheet in 12 evenly spaced mounds. Using the back of a spoon, spread and flatten batter into circles about 2 inches wide.
- Bake in the oven for about 8-10 minutes, until a toothpick inserted into the center of a cookie comes out clean.
- Remove baking sheet from the oven, and allow cookies to cool for 1 minute on the sheet. Then transfer cookies to a wire rack to cool COMPLETELY.
