Peanut-Sauced Chicken Pitas

Yields: 2 pita halves

Ingredients

  • 1  cup  shredded shredded skinkess boneless, rotisserie chicken thighs or 1  cup  drumstick  meat
  • 13 cup  thinly sliced green onion
  • 2  tablespoons  thin red bell peppers (cut into stips)
  • 2  tablespoons  peanut satay sauce
  • 18 teaspoon kosher salt
  • 1  teaspoon  chili paste with garlic (optional)
  • 1 (6 inch)  whole wheat pita bread, cut in half
  • 12 cup fresh bean sprout, rinsed, drained, and patted dry
  • 2  tablespoons  diagonally-cut carrots
  • 2  tablespoons  chopped fresh cilantro

Directions

  1. Combine the first 5 ingredients, tossing well to coat.
  2. Stir in chile paste if desired.
  3. Fill each pita half with 1/2 cup of chicken mixture, 1/4 cup bean sprouts, 1 tablespoon carrot, and 1 tablespoon cilantro.
  4. Serve.
