Peanut Rice

Ingredients
- 1 cup basmati rice
- 2 1⁄4 cups water
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon ground turmeric
- 1⁄2 cup frozen baby peas, thawed
- 1⁄2 cup dry roasted peanuts, chopped
- 1⁄4 cup green onion, sliced (green and white parts)
Directions
- Mix the rice, water, salt, and turmeric in a pot, and bring to a boil. Cover, reduce heat to low, and simmer 20 minutes.
- Stir the onions, peas and peanuts into the cooked rice, and serve.
