Peanut Dipping Sauce With a Kick

I searched through the many peanut dipping sauces on 'Zaar and couldn't find a duplicate of how I make my sauce...So here it is!

• Yields: 2 cups

Ingredients

• 1⁄2 cup  smooth peanut butter
• 1⁄4 cup hot water
• 1⁄3 cup coconut milk (I use light)
• 1  tablespoon  sesame oil
• 1⁄2 tablespoon fish sauce
• 1  teaspoon fresh ginger, minced fine
• 1  tablespoon light soy sauce
• 2  tablespoons fresh lime juice
• 1  tablespoon  Asian chili sauce (Sriracha is my favorite)
• 1 1⁄2 tablespoons dark brown sugar
• 1 -2  garlic clove, minced
• 1  tablespoon cilantro, chopped fine
• 2  large scallions, sliced thin white and green parts

Directions

1. Whisk peanut butter and hot water together in a medium bowl.
2. Stir in remaining ingredients and use as a dipping sauce or on noodles!
