Peanut Dipping Sauce With a Kick

Yields: 2 cups
Ingredients
- 1⁄2 cup smooth peanut butter
- 1⁄4 cup hot water
- 1⁄3 cup coconut milk (I use light)
- 1 tablespoon sesame oil
- 1⁄2 tablespoon fish sauce
- 1 teaspoon fresh ginger, minced fine
- 1 tablespoon light soy sauce
- 2 tablespoons fresh lime juice
- 1 tablespoon Asian chili sauce (Sriracha is my favorite)
- 1 1⁄2 tablespoons dark brown sugar
- 1 -2 garlic clove, minced
- 1 tablespoon cilantro, chopped fine
- 2 large scallions, sliced thin white and green parts
Directions
- Whisk peanut butter and hot water together in a medium bowl.
- Stir in remaining ingredients and use as a dipping sauce or on noodles!
