Peanut Butter Pick-Me Ups

Ingredients
- 1⁄3 cup unsalted butter
- 2⁄3 cup dark brown sugar
- 1⁄2 cup chunky peanut butter
- 1⁄2 teaspoon baking powder
- 1⁄2 teaspoon cinnamon
- 1⁄2 teaspoon ground ginger
- 1⁄2 teaspoon salt
- 1 large egg
- 1⁄2 cup unbleached all-purpose flour
- 2 cups granola cereal
- 1⁄2 cup dry-roasted salted peanuts, very coarsely crushed
- 1⁄2 cup raisins (add dried fruit only if there isn't any in the granola) or 1⁄2 cup dried cranberries (add dried fruit only if there isn't any in the granola) or 1⁄2 cup dried cherries (add dried fruit only if there isn't any in the granola)
Directions
- Preheat oven to 350°; lightly grease (or line with parchment) two baking sheets.
- In a big bowl, cream the butter, brown sugar, peanut butter, baking powder, cinnamon, ginger, and salt together.
- Add the egg, beating the mixture until it is smooth and fluffy.
- Stir in the flour, then the granola, nuts, and dried fruit.
- Drop the dough by the tablespoonful onto the prepared baking sheets, then flatten slightly with your fingers.
- Bake the cookies for 12 minutes, until they are lightly browned.
- Remove them from the oven and transfer to a rack to cool.
