Peanut Butter Oatmeal Cookies - Sugar Free

Ingredients

  • 12 cup butter
  • 1 14 cups  Splenda brown sugar blend, firmly packed
  • 12 cup milk or 12 cup evaporated milk
  • 1  pinch salt
  • 12 cup  natural-style peanut butter
  • 1  teaspoon vanilla extract
  • 3  cups  quick-cooking rolled oats

Directions

  1. Line two baking sheets with waxed paper.
  2. In a large heavy saucepan combine the butter, brown sugar, milk, and salt.
  3. Bring mixture to boil over medium heat, stirring occasionally, until mixture comes to a full rolling boil.
  4. Without stirring, let mixture boil for exactly 3 minutes. Immediately remove from heat.
  5. Stir in peanut butter and vanilla, stirring until peanut butter has melted. Quickly stir in the oats, mix well.
  6. Working fast, drop mixture by tablespoonfuls onto prepared baking sheets. Allow to cool and become firm, about 30 minutes.
