Peanut Butter Gravel Balls

This recipe started as rice crispies treats, but as I started adding healthier ingredients it has evolved into this little treasure:) Any dried fruit can be substituted for the dates, and crunchy peanut butter can be used instead of smooth. Cooking time refers to refrigeration time, and the servings depend on how large you make your balls. Show more

Yields: 24-36 balls

Ingredients

  • 1 12 cups  dry oatmeal
  • 1 12 cups  grape nuts  cereal
  • 12 cup  natural  smooth peanut butter
  • 12 cup honey
  • 1  teaspoon vanilla
  • 12 cup  chopped dates

Directions

  1. In a small bowl, microwave peanut butter and honey together until peanut butter melts (10 seconds at a time is best since microwaves differ).
  2. Add vanilla to peanut butter and honey mixture and stir until combined.
  3. In a large bowl, combine grape nuts, oatmeal, and dates.
  4. Stir in peanut butter mixture until well mixed (this will be difficult but worth it!)
  5. Using wet hands, form into 1" - 1 1/2" balls.
  6. Place balls in a plastic bag or bowl and refrigerate 1-2 hours until firm.
